DavidIn the demo for the MarketStore setup, there is an iphone header image that persists on all shop pages. Is it possible to configure that to be a different image for each category in the shop?

Of course! you can log in to Dashboard > Product > Categories then hover over your categories title and click "edit" below the title and you will see the Thumbnail section.
