How do I set a blank Blog page?

Hi guys and gals, thank you for the great theme it looks great. I have a query about setting a blank blog page. Currently when I click on ‘blog’ it showcases all of my current posts. I have set up a new category and tried to set the posts in this new one to check if only the one would then appear. But it seems that all posts still are listed, even though they are not set in this new category. Is there a way to get round this and set a new, fresh and completely blank blog to start from scratch?
